I love eggs for breakfast, and I absolutely love a big breakfast on Sundays. Growing up my dad would whip up this delicious spiced scrambled egg dish every Sunday for me with some toasted bread. It’s one of my favourite memories of breakfast with him, and it’s a recipe that I love sharing.

This is such a simple way to make your eggs go from plain to amazing! With just a few spices, onion and tomato, you end up with a wonderful brunch meal that is perfect for large groups. It’s definitely the kind of recipe to make for a big family get together.

  • Mixing bowl

Ingredients
  

  • 4 eggs at room temperature
  • ½ a large white onion, chopped fine
  • 1 medium tomato, chopped fine
  • tsp whole black mustard seeds
  • ½ tsp ground turmeric
  • ½ tsp ground coriander
  • ½ tsp chilli powder or paprika
  • 1 tbsp. chopped coriander leaves cilantro
  • 1 tbsp. lemon juice
  • 1 whole green chilli, chopped optional
  • salt and pepper
  • vegetable oil for cooking
  • ½ tsp minced garlic
  • ½ tsp minced ginger

Instructions
 

  • Crack the eggs into a bowl and lightly whisk through
  • Heat up 1 tbsp. of oil in a pan over a medium heat
  • add the whole mustard seeds and cumin seeds to the hot oil and fry until they start the sputter
  • Lower the heat of the pan, then add the chopped onions and a pinch of salt. Return the pan to a medium heat. Sauté until soft and translucent
  • Add the chopped the tomatoes and sauté with a pinch of salt until soft and they start to lose their colour
  • Add the ground coriander, chili powder, green chilli (if using) and add the minced garlic and ginger. Mix everything through well until the raw smell of the garlic and ginger has cooked off
  • Pour in the eggs and use a wooden spoon to mix through the contents of the pan. Be very gentle. For soft eggs, mix the pan slowly over low heat
  • After 2 minutes or so, add the chopped coriander and cook the eggs to your liking
  • Serve hot with some toasted and buttered bread
